Georgia’s relationship with wine stretches back thousands of years, but its winemaking tradition is far from frozen in the past. Today, ancient methods and contemporary knowledge exist side by side, shaping wines that are deeply connected to place, grape variety, and the individual philosophy of each winemaker.
At the heart of this story is the qvevri — a large clay vessel traditionally buried underground and used for fermentation, maturation, and storage. Yet the journey from qvevri to bottle is much more than a production process. It is a combination of agriculture, craftsmanship, patience, and countless decisions that ultimately define the character of the wine.\

It All Begins in the VineyardEvery bottle of wine begins long before the grapes reach the cellar.
The location of the vineyard, its soil, altitude, exposure to sunlight, climate, and the age of the vines all influence the fruit that will eventually become wine. Georgia’s diverse landscape creates remarkably different growing conditions across its wine regions — from the warmer vineyards of Kakheti to the cooler climates of Kartli, Imereti, Racha, Lechkhumi, and beyond.
For the winemaker, the growing season is a continuous process of observation and decision-making. Vineyard management, yield, weather conditions, and the timing of harvest can dramatically influence the final result.
Harvesting at the right moment is particularly important. Grapes must achieve the balance of ripeness, acidity, aroma, and structure that the winemaker is seeking. For some wines, this may mean freshness and delicacy. For others, greater concentration and maturity.
The character of the final wine begins with the choices made in the vineyard.
The grape harvest — rtveli in Georgian — is one of the most important moments of the winemaking year.
Traditionally, it is also a social and cultural occasion, bringing together families, friends, and communities. But from a winemaking perspective, harvest is a moment of precision. Once picked, grapes begin to change immediately, making careful handling and timing essential.
After arriving at the cellar, the grapes are sorted and prepared for fermentation. Depending on the grape variety, region, and winemaking philosophy, the stems may be removed entirely, partially retained, or included in the fermentation.This is where different winemaking paths begin to emerge.
Some producers follow traditional regional methods. Others work with stainless steel, oak, or combinations of different vessels. Many contemporary Georgian winemakers move freely between ancient and modern techniques, choosing the method that best expresses the character of a particular vineyard or grape variety.

Fermentation: When Grapes Become Wine
Fermentation is the transformation at the heart of winemaking.
Yeasts convert the natural sugars in grape juice into alcohol, while aromas, flavors, texture, and structure begin to develop. Some winemakers rely on naturally occurring yeasts present on the grapes and in the cellar, while others may use selected yeasts to achieve greater control over the process.
In a qvevri, fermentation can be particularly dynamic. Grape skins and other solids rise and fall within the vessel and may require regular management during the active stages of fermentation.

Skin Contact and the Character of Amber Wine
One of Georgia’s most internationally recognized wine styles is amber wine.
Unlike conventional white wine production, where grape juice is typically separated from the skins relatively quickly, many Georgian amber wines are fermented and matured with prolonged skin contact.

But amber wine is not simply “white wine made differently.” It is a broad category with enormous stylistic diversity.
